Ingredients

  • 1 lb pork shoulder
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 3 cloves garlic
  • 2 tbsp lemon juice
  • 8 skewers bamboo skewers

Instructions

    Cut the 1 lb pork shoulder into 1-inch cubes. In a bowl, mix 0.25 cup soy sauce, 0.25 cup brown sugar, 3 minced garlic cloves, and 2 tbsp lemon juice until the sugar dissolves.

    Add the pork cubes to the marinade, toss to coat, and let sit for 10 minutes while you soak 8 bamboo skewers in water.

    Thread 4-5 pork cubes onto each skewer, pressing them snugly together. Reserve the leftover marinade for basting.

    Grill the skewers over medium-hot charcoal, turning every 2-3 minutes and basting with the reserved marinade, until the pork is charred at the edges and cooked through, about 10-12 minutes total.
