Ingredients

  • 2 steaks filet mignon steaks
  • 1 pound baby potatoes
  • 2 cups broccoli florets
  • 1 cup brussels sprouts
  • 2 tablespoons butter
  • 1 pinch salt and pepper

Instructions

  1. 1

Place the 1 lb baby potatoes in a pot, cover with salted water, and boil until fork-tender, about 12 minutes. Drain and return to the pot.

  2. 2

While potatoes cook, heat a skillet over high heat. Season the 2 filet mignon steaks with salt and pepper, then sear for 3-4 minutes per side for medium-rare, or until browned and cooked to your liking.

  3. 3

In the same skillet, add the 2 cups broccoli florets and 1 cup brussels sprouts with a splash of water. Cover and steam until bright green and tender-crisp, about 4 minutes.

  4. 4

Mash the potatoes with the 2 tbsp butter and a splash of milk or water until smooth. Season with salt and pepper.

  5. 5

Serve the steak with a scoop of mashed potatoes and the vegetables on the side, spooning any pan juices over the steak.
