Ingredients

  • 1 head romaine lettuce
  • 3 medium tomatoes
  • 2 medium cucumbers
  • ½ medium red onion
  • 6 whole radishes
  • 1 cup fresh parsley
  • ½ cup fresh mint
  • 2 whole pita bread
  • ⅓ cup lemon juice
  • ¼ cup olive oil
  • 2 whole garlic cloves
  • 1 teaspoon sumac
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

    Preheat oven to 375°F (190°C). Cut pita bread into triangles, toss with olive oil, salt, and pepper. Spread on a baking sheet.

    Bake pita chips for 8–10 minutes until golden and crispy. Set aside to cool.

    Wash and tear romaine lettuce into bite-sized pieces. Place in a large salad bowl.

    Dice tomatoes and cucumbers. Thinly slice red onion and radishes. Add all to the bowl.

    Chop fresh parsley and mint. Add to the bowl.

    Mince garlic cloves and place in a small bowl.

    Whisk in lemon juice, olive oil, sumac, salt, and black pepper until well combined.

    Taste and adjust seasoning as needed.

    Pour dressing over the salad and toss gently to combine.

    Top with crispy pita chips just before serving to maintain crunch.
