Ingredients

  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • 3 tablespoons tahini (sesame paste)
  • 4 cloves garlic cloves, minced
  • 3 tablespoons lemon juice
  • 5 tablespoons olive oil, divided
  • 2 pieces pita bread
  • ½ teaspoon ground cumin
  • 1 pinch salt and pepper to taste

Instructions

    Set the oven to 375°F and wait for the indicator light to tell you it has finished heating, about 10 minutes.

    Cut each pita bread in half, then cut each half into triangle-shaped pieces roughly the size of a poker chip.

    Spread the pita triangles in a single layer on a baking sheet and drizzle with 1 tablespoon of olive oil.

    Slide the baking sheet into the oven and bake for 8–10 minutes, until the pita pieces turn the color of light toast and feel crispy when you touch one.

    Remove the baking sheet from the oven and set the pita chips on the counter to cool slightly while you prepare the hummus.

    Place the drained chickpeas, tahini, 3 minced garlic cloves, lemon juice, 2 tablespoons of olive oil, and a pinch of salt into a food processor.

    Blend on high speed, scraping down the sides every 15 seconds with a rubber spatula, until the mixture looks completely smooth and creamy with no visible chunks, about 90 seconds total.

    Taste the hummus and add more salt or lemon juice if it needs it — it should taste savory and slightly tangy.

    Mince the remaining 1 garlic clove into tiny pieces smaller than a grain of rice and place it in a small skillet.

    Pour the remaining 2 tablespoons of olive oil into the skillet with the minced garlic and set the heat to medium.

    Cook the garlic in the hot oil for 60–90 seconds, stirring constantly with a wooden spoon, until it turns light golden and smells strongly fragrant — do not let it brown.

    Pour the warm hummus into a serving bowl, then create a shallow well in the center by pushing a large spoon down into the hummus and twisting it.

    Carefully pour the garlic oil (with the minced garlic pieces) into the well in the center of the hummus.

    Scatter the pita chips over the top of the hummus, covering the surface in a loose single layer.

    Sprinkle the ground cumin evenly over the pita chips and serve immediately while the chips are still crispy.
