- 1 cup rice
- 2 medium yellow squash
- 1 medium onion
- ¼ cup tahini
- 2 tbsp lemon juice
- 3 tbsp olive oil
- ½ tsp salt

Slice 2 yellow squash into half-moons and 1 onion into thin strips. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
