Ingredients
- 8 discs empanada dough discs
- 1 lb ground beef
- 1 medium onion
- 1 tsp cumin
- 2 ripe avocado
- 1 juiced lime
- 1 tsp salt
- 2 tbsp olive oil

Heat 1 tbsp olive oil in a skillet over medium-high. Add 1 diced onion and cook until soft, about 5 minutes.

Add 1 lb ground beef and 1 tsp cumin. Cook, breaking up meat, until browned and no longer pink, about 8 minutes. Season with 1/2 tsp salt. Let cool slightly.

Preheat oven to 400°F. Place 8 empanada discs on a work surface. Spoon about 2 tbsp filling onto each. Fold and press edges with a fork to seal.

Brush empanadas with remaining 1 tbsp olive oil. Bake until golden brown, 20-25 minutes.
