Egg Banjo Sandwich

Ingredients

  • 2 slices bread
  • 1 large egg
  • 1 tbsp butter
  • 1 tbsp ketchup

Instructions

    Heat a skillet over medium-high until a drop of water skitters across the surface, about 60 seconds.

    Crack the egg into the pan without stirring. Cook until whites set but the yolk still jiggles when you nudge it, 3–4 minutes.

    Butter both slices of bread while the egg cooks. Spread ketchup over one slice.

    Slide the egg onto the ketchup-side toast, yolk facing up. Top with the other slice, buttered-side down.

    Serve immediately, before the yolk sets.
