Ingredients

  • 1 cup tapioca starch
  • ½ cup dried shrimp, finely minced
  • ¼ cup water
  • ½ tsp salt
  • ¼ tsp white pepper
  • 2 cups neutral oil for frying

    Mix tapioca starch, minced dried shrimp, salt, and white pepper in a bowl.

    Add water gradually, stirring until the mixture forms a stiff, clay-like dough.

    Press dough between two sheets of parchment into a thin, even 1/8-inch layer.

    Cut into 2-inch squares with a knife or pizza cutter.

    Heat oil in a deep pot or wok to 350°F, measured with a thermometer.

    Fry crackers in batches, 20-30 seconds per side, until pale golden and crispy.
