Ingredients

  • 4 slices bacon, chopped
  • 1 lb potatoes, diced small
  • 1.5 lbs seafood (shrimp, scallops, cod), bite-sized
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 serving salt and black pepper to taste

Instructions

    Cook bacon in a large pot over medium-high until crispy, ~5 minutes. Transfer to a plate.

    In the same pot, melt butter in the bacon fat. Add potatoes and stir to coat.

    Pour in broth and bring to a boil. Reduce heat to medium and simmer until potatoes are tender, ~8 minutes.

    Add seafood and cream. Stir gently and simmer until shrimp turns pink and scallops are opaque, ~4 minutes.

    Crumble bacon back in. Season with salt and pepper. Serve hot.
