Ingredients

  • 1.25 cups all-purpose flour
  • ½ cup cold butter, cubed
  • ¼ tsp salt
  • 3 tbsp ice water
  • 2 lbs Granny Smith apples
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • ¾ cup brown sugar
  • ¾ cup old-fashioned rolled oats
  • ¼ cup cold butter for streusel, cubed

Instructions

  1. 1

Mix flour and salt in a bowl. Add cold butter cubes and rub with fingertips until breadcrumb texture.

  2. 2

Sprinkle ice water 1 tbsp at a time, tossing with a fork until dough just comes together.

  3. 3

Shape dough into a disk, wrap in plastic, and chill 30 minutes.

  4. 4

Preheat oven to 375°F. Roll dough to fit a 9-inch pie pan; press in and prick bottom with a fork.

  5. 5

Peel, core, and slice apples into 0.25-inch wedges. Toss with sugar, cinnamon, and lemon juice.

  6. 6

Arrange apple slices in the crust, mounding slightly toward the center.

  7. 7

Mix brown sugar and oats in a bowl. Cut in cold butter until crumbly texture forms.

  8. 8

Spread streusel evenly over apples, pressing gently so it adheres.

  9. 9

Bake 40–45 minutes until crust edges are golden and apples bubble at the sides.

  10. 10

Cool on a wire rack 10 minutes before slicing. Serve warm or at room temperature.
