Ingredients

  • 1 lb Dungeness crab meat (fresh or thawed)
  • ⅓ cup mayonnaise
  • 1 whole lemon (zested + juiced)
  • 1 whole garlic clove
  • 2 whole brioche buns
  • 1 tbsp butter (for toasting)
  • 1 tbsp fresh herbs (dill or chives, chopped)

Instructions

    Mince the garlic finely and mash into a paste with a pinch of salt.

    Mix mayo, lemon zest, lemon juice, and garlic paste in a small bowl until combined.

    Pick through crab meat to remove shells. Gently fold into aioli with fresh herbs.

    Heat a skillet over medium. Butter both sides of brioche buns and toast until golden, ~2 minutes per side.

    Divide crab mixture evenly between toasted buns. Serve immediately.
