Ingredients
- 1.5 lbs fresh green beans, trimmed and patted dry
- 3 tbsp vegetable oil for frying
- 4 cloves garlic cloves, minced
- 1 tbsp fresh ginger, minced
- ½ tsp dried red chili flakes
- 2 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp sugar
- ¼ tsp Sichuan peppercorns, toasted and ground (optional)
- 2 stalks green onion, sliced for garnish
- 1 tsp sesame seeds for garnish

Trim green beans and pat completely dry with paper towels.

Mince garlic and ginger, and slice green onions for garnish.

Heat vegetable oil in a 12-inch wok or large skillet over high heat until shimmering.

Add green beans in a single layer. Do not stir for 2-3 minutes to allow blistering and browning.

Toss beans and continue cooking, stirring occasionally, until deeply browned and wrinkled, about 4-5 minutes total.

Push beans to the side of the wok. Add minced garlic and ginger to the empty space, stirring constantly for 30 seconds until fragrant.

Add chili flakes and stir everything together for 15 seconds.

Pour in soy sauce and sesame oil, add sugar and ground Sichuan pepper if using. Toss to coat evenly.

Cook for 1 minute until sauce adheres to the beans. Remove from heat.
