Ingredients

  • 2 cups frozen dragon fruit chunks
  • 1 large frozen banana
  • ¾ cup unsweetened coconut milk beverage
  • 2 tablespoons unsweetened almond butter
  • ½ teaspoon pure vanilla extract
  • ½ cup granola (vegan)
  • ½ cup fresh blueberries
  • ¼ cup unsweetened coconut flakes
  • 6 leaves fresh mint leaves
  • 1 tablespoon chia seeds

    Add 2 cups of frozen dragon fruit chunks, 1 large frozen banana (peel and break into chunks before freezing if using fresh), 0.75 cup of unsweetened coconut milk beverage, 2 tablespoons of unsweetened almond butter, and 0.5 teaspoon of pure vanilla extract to a high-powered blender. Blend on high speed for 45-60 seconds, pausing once to scrape down the sides with a spatula, until completely smooth and creamy with no icy chunks remaining. The mixture should be thick enough to hold a spoon upright but pourable.

    Divide the smoothie base evenly between two bowls, pouring it in and using the back of a spoon to create a smooth, level surface. Work quickly — the smoothie will begin to soften as soon as it's exposed to room temperature.

    Scatter 0.5 cup of vegan granola over the two bowls in an even layer, starting from the edges and working toward the center. Pile 0.5 cup of fresh blueberries in a small cluster on top of the granola, then sprinkle 0.25 cup of unsweetened coconut flakes across both bowls. Tear 6 fresh mint leaves into pieces and scatter over the top, then finish with 1 tablespoon of chia seeds divided between the two bowls.
