Ingredients

  • 1 lb ground beef (80/20)
  • 4 slices bacon
  • 2 burger buns
  • 4 cheddar cheese slices
  • 2 tbsp mayonnaise
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Cook the 4 bacon slices in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.

  2. 2

Divide the 1 lb ground beef into 4 equal portions and shape into thin patties, about 4 inches wide. Season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

  3. 3

Heat the same skillet over medium-high heat (discard excess bacon fat, leaving about 1 tbsp). Cook the patties for 2-3 minutes per side until browned and cooked through.

  4. 4

Place 1 slice of cheddar cheese on each patty during the last minute of cooking, covering the skillet to melt the cheese.

  5. 5

Toast the 2 burger buns in the skillet until golden, about 1 minute. Spread 1 tbsp mayonnaise on each bottom bun.

  6. 6

Stack 2 patties on each bottom bun, top with 2 slices of bacon, then cover with the top bun. Serve hot.

  7. 7

Let the burgers rest for 2 minutes before serving to allow the juices to settle.
