Dorayaki (Red Bean Pancakes)
Soft, pillowy Japanese pancakes sandwiched with sweet red bean paste. Made on the stovetop in about 30 minutes with just six ingredients.

Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1 large egg
- ¾ cup milk
- ¾ cup sweet red bean paste
Instructions

Whisk together flour, sugar, and baking powder in a medium bowl.

In another bowl, whisk egg and milk together until combined.

Pour wet ingredients into dry ingredients and stir until just combined; lumps are okay.

Heat a non-stick skillet over medium heat. Lightly oil the surface, ~90 seconds.

Pour 2 tbsp batter onto skillet; cook until edges look dry and bottom is golden, ~2 minutes.

Flip and cook the other side until golden brown, ~60 seconds. Transfer to a plate.

Repeat with remaining batter to make 12 pancakes total. Let cool 1 minute between batches.

Spread 1 tbsp red bean paste on the flat side of one pancake.

Top with another pancake, flat side down. Press gently to seal. Repeat with remaining pancakes.
