Ingredients

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 3 large eggs
  • 4 tbsp butter, melted
  • 1 tsp baking powder
  • 1 jar (10 oz) maraschino cherries with juice
  • 2 tbsp unsweetened cocoa powder

    Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment.

    Whisk eggs and sugar until pale and fluffy, about 2 minutes. Fold in flour, baking powder, and melted butter until just combined.

    Pour batter into pan, spread level. Drain cherries and scatter them evenly over the top.

    Dust cocoa powder over the cherries. Use a skewer to swirl cocoa and cherry juice into the batter, creating marbled veins.

    Bake until a toothpick inserted in the center comes out clean, 16–18 minutes.

    Cool 5 minutes in the pan, then slice and serve warm.
