Ingredients
- 2 lbs beef sirloin or chuck, trimmed
- 2 large yellow onions
- 6 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 1.5 tsp cayenne pepper
- 1 tsp ground cumin
- ⅓ cup olive oil
- 3 tbsp lime juice or lemon juice
- 1 pinch salt and black pepper to taste

Cut beef into 1.5-inch cubes. Pat dry with paper towels to remove excess moisture.

Whisk together minced garlic, grated ginger, cayenne, cumin, olive oil, lime juice, salt, and pepper in a bowl.

Add beef cubes to the marinade and toss until fully coated. Cover and refrigerate for 20 minutes minimum (or up to 4 hours).

Cut onions into thick rings or chunks. Thread beef and onion alternately onto metal skewers, leaving 0.25 inch between pieces.

Heat grill or grill pan over high heat until very hot, about 3 minutes. Lightly oil the grate.

Lay skewers on the grill without moving them. Char for 3 minutes until edges blacken and meat releases easily.

Flip skewers once. Cook 3-4 minutes more until the second side is charred and beef is medium-rare to medium inside.

Transfer skewers to a cutting board and let rest 3 minutes. Serve hot with lime wedges and extra onions.
