Ingredients

  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • 1 can (15 oz) canned black beans, drained and rinsed
  • ½ medium red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime (juiced)
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Drain and rinse both cans of beans in a fine-mesh strainer.

    Dice red onion into small, uniform pieces and roughly chop fresh cilantro.

    Combine beans, red onion, and cilantro in a large bowl.

    Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
