Ingredients

  • 1 cup Medjool dates, pitted
  • ¾ cup raw almonds
  • ⅓ cup unsweetened shredded coconut
  • ¼ tsp salt

Instructions

    Add dates and almonds to a food processor. Pulse until mixture is coarse and holds together when squeezed, ~30 seconds.

    Add salt and pulse once more until just combined.

    Pour coconut into a shallow bowl. Roll mixture into 1-inch balls, then roll each in coconut to coat.

    Store in an airtight container in the fridge for up to 2 weeks.
