Ingredients

  • 2 whole ripe avocado
  • 4 oz dark chocolate
  • ¼ cup unsweetened cocoa powder
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ⅛ tsp sea salt
  • ¼ cup almond milk

    Chop the dark chocolate into small pieces and place in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely melted and smooth, about 1 minute total.

    Cut avocados in half, remove the pit, and scoop the flesh into a food processor or blender. Add the melted chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt.

    Blend until completely smooth and creamy, scraping down the sides as needed, about 1–2 minutes. If the mousse is too thick, add almond milk 1 tablespoon at a time and blend until you reach a silky, spoonable consistency.

    Divide the mousse evenly among four serving glasses or bowls. Chill in the refrigerator for at least 30 minutes, or serve immediately for a slightly warmer texture.
