Ingredients

  • 8 shells Frozen puff pastry shells (2.1 oz / 59g each)
  • 3 large Egg yolks
  • ½ cup Whole milk
  • 3 tbsp Granulated sugar
  • 1 tbsp Cornstarch
  • ½ tsp Vanilla extract

Instructions

  1. 1

Preheat oven to 400°F. Arrange puff pastry shells on a baking sheet and bake for 8 minutes until puffed and light golden.

  2. 2

Whisk egg yolks, sugar, and cornstarch in a bowl until smooth and pale, about 1 minute.

  3. 3

Heat milk in a small saucepan over medium until steaming, then slowly pour into the egg mixture while whisking constantly to avoid scrambling.

  4. 4

Pour the custard back into the saucepan and stir over medium heat for 2 minutes until it thickens and coats the back of a spoon.

  5. 5

Remove from heat and stir in vanilla extract. Let cool for 1 minute, then divide custard among the partially-baked pastry shells.

  6. 6

Return to oven and bake for 8 more minutes until custard is set and the tops are deeply caramelized with dark spots.
