Ingredients
- 8 shells Frozen puff pastry shells (2.1 oz / 59g each)
- 3 large Egg yolks
- ½ cup Whole milk
- 3 tbsp Granulated sugar
- 1 tbsp Cornstarch
- ½ tsp Vanilla extract

Preheat oven to 400°F. Arrange puff pastry shells on a baking sheet and bake for 8 minutes until puffed and light golden.

Whisk egg yolks, sugar, and cornstarch in a bowl until smooth and pale, about 1 minute.

Heat milk in a small saucepan over medium until steaming, then slowly pour into the egg mixture while whisking constantly to avoid scrambling.

Pour the custard back into the saucepan and stir over medium heat for 2 minutes until it thickens and coats the back of a spoon.

Remove from heat and stir in vanilla extract. Let cool for 1 minute, then divide custard among the partially-baked pastry shells.
