Ingredients
- 1.5 lbs chicken thighs, boneless and skinless, cubed
- 1 medium yellow onion, cut into wedges
- 1 medium potato, cubed
- 1 can (13.5 oz) coconut milk, full-fat
- 2 tbsp curry powder (or garam masala)
- 1 tbsp fish sauce
- 1 stalk lemongrass, minced (or 1 tsp lemongrass paste)

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add curry powder and lemongrass, stir constantly until fragrant, about 60 seconds.

Add chicken and stir until opaque at edges, about 3–4 minutes (doesn't need to be fully cooked yet).

Pour in coconut milk, add onion, potato, fish sauce, salt, and pepper; stir to combine.

Bring to a boil, then reduce heat to medium and simmer uncovered until potato is tender and chicken cooked through, 8–10 minutes.

Taste and adjust seasoning with salt, pepper, or a squeeze of lime. Serve hot over rice.
