Ingredients

  • ¾ lb beef sirloin or flank, thinly sliced
  • 1.5 tbsp cumin seeds
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 3 stalks scallions, cut into 2-inch pieces
  • 1 tbsp fresh ginger, minced
  • 2 tbsp neutral oil

Instructions

    Toast cumin seeds in a dry skillet over medium-high heat, stirring, until fragrant, about 1 minute.

    Transfer cumin to a small bowl. Mix in soy sauce and rice vinegar; set aside.

    Add oil to the same skillet over high heat until it shimmers. Working in batches, sear beef 60 seconds per side without stirring — edges should look caramelized.

    Add ginger and scallions to the skillet. Toss for 30 seconds until fragrant.

    Pour the cumin-soy mixture over the beef and toss to coat, about 30 seconds.
