Ingredients
- ¾ lb beef sirloin or flank, thinly sliced
- 1.5 tbsp cumin seeds
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 3 stalks scallions, cut into 2-inch pieces
- 1 tbsp fresh ginger, minced
- 2 tbsp neutral oil

Toast cumin seeds in a dry skillet over medium-high heat, stirring, until fragrant, about 1 minute.

Transfer cumin to a small bowl. Mix in soy sauce and rice vinegar; set aside.

Add oil to the same skillet over high heat until it shimmers. Working in batches, sear beef 60 seconds per side without stirring — edges should look caramelized.
