Cucumber Lime Refresher

Ingredients
- 1 medium cucumber
- 1 whole lime
- 1.5 cups water
- 1 tablespoon honey or agave syrup
- 1 cup ice

Rinse the cucumber under cold running water and pat it dry with a paper towel. Cut off the stem end and the tip end, then slice the cucumber lengthwise into quarters. Lay each quarter flat-side down and slice crosswise into 1/4-inch-thick pieces.

Place the cucumber pieces into a blender. Cut the lime in half and squeeze both halves into the blender, catching any seeds with your other hand or a small strainer. Pour in 1.5 cups of cold water.

Add 1 tablespoon of honey or agave syrup to the blender. Secure the lid and blend on high speed for 30 seconds until the mixture looks pale green and the cucumber is mostly broken down.

Pour the blended mixture through a fine-mesh strainer set over a pitcher, using the back of a spoon to press the pulp and extract all the liquid, about 1 minute. Discard the pulp.

Fill two tall glasses halfway with ice cubes. Pour the strained cucumber-lime liquid equally into both glasses until they are full, about 3/4 cup per glass. Stir once and serve immediately.
