  • 1 lb shrimp, peeled and deveined
  • 2 medium tomato, diced
  • 1 medium red onion, sliced
  • 1 medium yellow bell pepper, sliced
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp salt

Instructions

    In a bowl, toss the 1 lb shrimp with 1 tbsp olive oil, 1/2 tsp salt, and 1 tsp ground cumin. Let marinate while you prep the vegetables.

    Heat 2 tbsp olive oil in a large skillet over medium-high. Add the 1 sliced red onion and 1 sliced yellow bell pepper; cook until softened and lightly charred, about 5 minutes.

    Add the 3 minced garlic cloves and 2 diced tomatoes; cook until tomatoes break down and mixture thickens, about 3 minutes. Season with extra salt if needed.

    Push vegetables to one side of the skillet. Add the shrimp in a single layer; cook without stirring until pink and opaque on the bottom, about 2 minutes.

    Flip shrimp and cook until just cooked through, about 1-2 minutes more. Stir everything together to coat shrimp in the sauce.
