Ingredients

  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • ½ tsp salt
  • ¾ cup warm water
  • 1 cup cheddar cheese, shredded
  • ½ cup fruit chutney (apricot or mango)

Instructions

    Mix flour, baking powder, and salt in a bowl. Add warm water and stir until a soft dough forms.

    Knead the dough on a floured surface for 2 minutes until smooth, then divide into 8 equal pieces.

    Flatten each piece into a thin disk, place 2 tbsp cheese and 1 tbsp chutney in the center, then fold and seal edges.

    Heat oil in a deep skillet to 350°F. Fry each vetkoek 2 minutes per side until golden brown and crispy.
