Ingredients

  • 4 tortillas corn tortillas (6-inch)
  • ½ cup neutral oil
  • ¾ cup refried beans
  • ¾ cup shredded Oaxaca or mozzarella cheese
  • ½ cup salsa (fresh or jarred)
  • 1 small handful fresh cilantro or lime wedges (optional)

Instructions

    Heat oil in a shallow skillet over medium-high until a tortilla sizzles immediately on contact, ~2 minutes.

    Fry tortillas one at a time, 45 seconds per side, until golden and crispy. Transfer to a paper towel.

    Spread 2 tablespoons warm refried beans on each tostada, pressing gently to adhere.

    Divide cheese evenly among tostadas. Top with 2 tablespoons salsa each.

    Serve immediately. Garnish with cilantro or serve with lime wedges if desired.
