  • 4 pieces corn tortillas
  • ¾ cup canned black beans, drained and warmed
  • ¾ cup shredded Mexican blend cheese
  • ½ cup diced tomato
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp neutral oil for frying

Instructions

    Heat oil in a 10-inch skillet over medium-high until shimmering, about 90 seconds.

    Fry one tortilla until crispy and light brown on both sides, about 90 seconds total. Transfer to a plate.

    Repeat with remaining tortillas, frying one at a time until all are golden and crispy.

    Spread 3 tablespoons of warm black beans onto each crispy tortilla base.
