Ingredients

  • 4 slices, about 0.75 inch thick crusty bread (like a baguette or ciabatta)
  • 2 medium ripe tomatoes (plum or beefsteak)
  • 3 tbsp Spanish olive oil (extra virgin)
  • 2 cloves garlic
  • ½ tsp fleur de sel or Maldon sea salt
  • 3 leaves fresh basil or flat-leaf parsley (optional)

    Heat a skillet over medium-high until it shimmers, about 90 seconds.

    Toast bread slices 90 seconds per side until edges char and surface turns golden.

    Rub each warm toast with a cut garlic clove, pressing gently so it dissolves into the bread.

    Cut tomatoes in half and squeeze halves over a small bowl to release juices, then roughly chop the flesh.

    Divide tomato onto toasts, drizzle with olive oil, and sprinkle with fleur de sel and black pepper.
