Ingredients

  • 1 lb sweet potatoes, medium
  • 2 tbsp olive oil
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 1 tbsp hot sauce (or paprika + cayenne)

    Heat oven to 425°F. Line a large baking sheet with parchment paper.

    Cut sweet potatoes lengthwise into 1/4-inch-thick wedges, then cut those wedges into 1/4-inch-thick fries.

    Pat fries dry with a clean towel — moisture prevents crispiness.

    Toss fries with olive oil, salt, and black pepper in a large bowl until evenly coated.

    Spread fries in a single layer on the baking sheet, cut-side down. Do not crowd the pan.
