Ingredients

  • 2 whole sweet potatoes, medium
  • 2 cups neutral oil (vegetable or canola)
  • 1 tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 2 whole garlic cloves, minced
  • ¼ tsp red pepper flakes

    Cut sweet potatoes into 1/4-inch-thick sticks, about 3 inches long.

    Pat fries completely dry with paper towels — moisture prevents crisping.

    Stir mayonnaise, minced garlic, and red pepper flakes in a small bowl.

    Heat oil in a deep, heavy pot to 350°F. Use a thermometer — proper temp is critical.

    Add half the fries. Do not stir. Let cook until golden and edges curl, ~6 minutes.

    Remove fries with a slotted spoon onto paper towels. Season immediately with salt and pepper.

    Repeat with remaining fries. Bring oil back to 350°F between batches.
