- 2 cups neutral oil (vegetable or canola)

- ½ cup mayonnaise
- 2 whole garlic cloves, minced
- ¼ tsp red pepper flakes

Heat oil in a deep, heavy pot to 350°F. Use a thermometer — proper temp is critical.
