Ingredients

  • 1.5 lbs sweet potatoes
  • 2.5 tbsp olive oil
  • 1 pinch salt and black pepper to taste
  • ½ tsp smoked paprika
  • ½ cup mayonnaise
  • 2 cloves garlic cloves, minced
  • 1 tbsp lemon juice

    Preheat oven to 425°F. Line a large baking sheet with parchment paper.

    Cut sweet potatoes lengthwise in half, then slice each half into 1/4-inch-thick wedges.

    Toss fries with olive oil, salt, pepper, and paprika until evenly coated.

    Spread fries in a single layer on the baking sheet, cut-side down. Bake 20 minutes.
