Ingredients

  • 1.5 cups all-purpose flour
  • 3 whole eggs
  • ½ cup whole milk
  • 4 tbsp butter
  • 8 leaves fresh sage leaves
  • ½ cup gruyère cheese, grated

Instructions

  1. 1

Whisk flour, eggs, milk, and a big pinch of salt until smooth, like thick pancake batter.

  2. 2

Bring a large pot of salted water to a boil. Working in batches, push batter through a colander into the water.

  3. 3

Spätzle will sink, then float to the surface after 2–3 minutes. Scoop them out with a slotted spoon onto a plate.

  4. 4

Heat butter in a large skillet over medium-high until foaming and golden, about 2 minutes.

  5. 5

Add sage leaves and cook 30 seconds until fragrant, then add spätzle and toss until edges turn crispy and golden, 3–4 minutes.

  6. 6

Toss with gruyère, salt, and pepper. Serve immediately while the butter foams.
