  • 1 cup shredded carrots
  • 8 count spring roll wrappers
  • 2 cups neutral oil for frying
  • ½ cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp fresh ginger, minced

    Place one spring roll wrapper on a flat surface with a corner pointing at you. Add 1 tbsp shrimp mixture and 2 tbsp shredded carrots in a line near the bottom.
