Ingredients

  • 12 count large shrimp, peeled and deveined
  • 1.5 cups crispy chow mein noodles (canned or fried wonton noodles)
  • 3 tbsp cornstarch
  • 1 count egg white
  • ½ cup sweet chili sauce
  • 3 cups neutral oil for deep frying
  • 1 count lime

Instructions

    Pat shrimp dry with paper towels. Toss with cornstarch and a pinch of salt until evenly coated.

    Whisk egg white in a small bowl. Dip each shrimp in egg white, then roll in crushed chow mein noodles, pressing gently so they stick.

    Heat oil in a deep skillet to 350°F (a pinch of noodles should sizzle immediately and float).

    Carefully slide 4–6 noodle-wrapped shrimp into hot oil. Fry 2–3 minutes, turning once, until golden and crispy on all sides.

    Transfer to a paper-towel-lined plate. Repeat with remaining shrimp in batches.

    Serve hot with sweet chili sauce on the side. Squeeze lime over the top.
