Ingredients
- 12 count large shrimp, peeled and deveined
- ¾ cup all-purpose flour
- ¾ cup cornstarch
- 3 tbsp sriracha or gochujang
- ½ cup mayonnaise
- 4 count nori sheets
- 2 cups cooked sushi rice, cooled

Mix flour and cornstarch in a shallow bowl. Whisk together 0.75 cup cold water + 1 egg yolk until foamy.

Heat 2 inches of neutral oil in a heavy pot to 350°F (use a thermometer—don't skip this).

Dip each shrimp into the foamy batter, then into the flour mixture. Fry in batches without crowding until golden and crispy, 2–3 minutes.

Lay a nori sheet shiny-side down. Spread 0.5 cup rice evenly, pressing gently. Flip so rice is on the outside.
