Ingredients

  • 12 count large shrimp, peeled and deveined
  • ¾ cup all-purpose flour
  • ¾ cup cornstarch
  • 3 tbsp sriracha or gochujang
  • ½ cup mayonnaise
  • 4 count nori sheets
  • 2 cups cooked sushi rice, cooled

Instructions

    Stir sriracha into mayo until smooth and bright red.

    Mix flour and cornstarch in a shallow bowl. Whisk together 0.75 cup cold water + 1 egg yolk until foamy.

    Heat 2 inches of neutral oil in a heavy pot to 350°F (use a thermometer—don't skip this).

    Dip each shrimp into the foamy batter, then into the flour mixture. Fry in batches without crowding until golden and crispy, 2–3 minutes.

    Lay a nori sheet shiny-side down. Spread 0.5 cup rice evenly, pressing gently. Flip so rice is on the outside.

    Arrange 3 shrimp and a stripe of spicy mayo across the nori. Roll tightly using the mat, then slice into 6 pieces with a wet knife.
