Ingredients

  • 2 cups frozen edamame (in pods)
  • 1.5 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

    Set the oven to 425°F and place a large sheet pan inside to heat, about 5 minutes.

    While the oven heats, place the frozen edamame in a large bowl and add the olive oil, sea salt, and black pepper.

    Stir the edamame with a spoon until every pod is evenly coated with oil and salt, about 1 minute.

    Carefully remove the hot sheet pan from the oven using oven mitts and pour the oiled edamame onto it in a single layer.

    Slide the pan back into the oven and roast for 6 minutes, then shake the pan side to side to roll the pods so they brown evenly.

    Return the pan to the oven and roast until the pods are golden brown and slightly wrinkled, about 2 more minutes.

    Remove the pan from the oven using mitts and let the edamame cool on the pan for 2 minutes before eating.
