Ingredients

  • 4 slices prosciutto
  • 1 whole avocado
  • 2 slices bread (sourdough or thick-cut white)
  • 2 whole eggs
  • 2 cups mixed greens
  • ½ whole lemon (halved for juice and zest)

Instructions

    Cook prosciutto in a skillet over medium heat until edges curl and it crisps, about 3 minutes per side. Transfer to a plate.

    Toast bread slices in the same skillet until golden brown on both sides, about 2 minutes total. Butter lightly.

    Add a touch more butter to the skillet, crack both eggs in, and cook until whites set but yolks still jiggle, ~4 minutes.

    Halve the avocado, scoop flesh onto toast, and smash gently with a fork. Squeeze lemon juice over top.

    Slide one egg onto each toast, crumble crispy prosciutto on top, and grind black pepper over everything.
