Ingredients

  • 1 lb ground pork or minced pork shoulder
  • ½ medium, diced yellow onion
  • 3 tbsp chicken liver spread (pâté) or sautéed chicken liver, chopped
  • 1 chopped red jalapeño or Thai chili
  • 2 tbsp soy sauce
  • 2 whole eggs

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Add pork and cook, breaking it into small bits with a spoon, until no pink remains and edges crisp, ~8 minutes.

    Stir in diced onion, chicken liver spread, and chili; cook until fragrant and onion softens, ~2 minutes.

    Pour soy sauce over the pork and toss to coat, letting it sizzle, ~30 seconds.

    Push pork to the sides, crack both eggs into the center, and cook until whites set but yolks still jiggle, ~3 minutes.
