Ingredients

  • 1.5 cups rotisserie pork shoulder, shredded
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 4 pieces flour or corn tortillas (6-inch)
  • ½ cup pickled red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped

Instructions

    Heat 1 tbsp oil in a skillet over medium-high until shimmering, about 60 seconds.

    Add shredded pork, chili powder, cumin, salt, and pepper. Stir frequently until edges crisp, 2–3 minutes.

    Warm tortillas in the same skillet, 20 seconds per side, or over a gas flame until lightly charred.

    Fill each tortilla with crispy pork, a pinch of pickled onion, and cilantro. Serve immediately.
