Ingredients

  • 1 lb pork skin, scored in 1-inch strips
  • 4 cups neutral cooking oil
  • 2 tbsp apple cider vinegar
  • 1.5 tsp fleur de sel or sea salt
  • 1 tbsp, chopped fresh thyme
  • ¼ tsp black pepper

Instructions

  1. 1

Pat pork skin completely dry with paper towels. Any moisture will cause splattering.

  2. 2

Heat oil in a deep skillet or pot to 350°F. Oil should shimmer and barely smoke.

  3. 3

Working in two batches, fry pork skin 6–7 minutes per batch until deep golden and puffed.

  4. 4

Remove with a slotted spoon and drain on paper towels. Skin should sound crispy when tapped.

  5. 5

Toss warm scratchings with vinegar, sea salt, thyme, and black pepper while still hot.

  6. 6

Serve immediately on a board or in a bowl. They stay crisp for 20 minutes.
