Ingredients
- 1 lb pork skin, scored in 1-inch strips
- 4 cups neutral cooking oil
- 2 tbsp apple cider vinegar
- 1.5 tsp fleur de sel or sea salt
- 1 tbsp, chopped fresh thyme
- ¼ tsp black pepper

Pat pork skin completely dry with paper towels. Any moisture will cause splattering.

Heat oil in a deep skillet or pot to 350°F. Oil should shimmer and barely smoke.

Working in two batches, fry pork skin 6–7 minutes per batch until deep golden and puffed.

Remove with a slotted spoon and drain on paper towels. Skin should sound crispy when tapped.

Toss warm scratchings with vinegar, sea salt, thyme, and black pepper while still hot.
