Ingredients

  • 2 pieces (6 oz each) pork chops or loin steaks, bone-in if possible
  • 1 lb waxy potatoes, halved lengthwise
  • 8 oz mushrooms, halved
  • 4 sprigs fresh thyme sprigs
  • 1 medium apple, cored and quartered
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Toss potato wedges with 2 tbsp oil, salt, and pepper on a sheet pan. Roast at 425°F for 18 minutes until golden, stirring halfway.

    Pat pork dry. Heat remaining oil in a large skillet over medium-high until shimmering. Season pork generously with salt and pepper.

    Sear pork 3 minutes per side without moving. Skin should be golden and crispy; center stays slightly pink. Transfer to a plate.

    In the same skillet, sauté mushrooms and thyme over medium-high heat for 4 minutes until golden and liquid evaporates.

    Add apple quarters to the skillet, toss with mushrooms, and cook 2 minutes until just soft at the edges.

    Serve pork alongside roasted potatoes, mushrooms, and apples. Drizzle any skillet juices over the top.
