Ingredients
- 2 racks (about 3 lbs) pork baby back ribs
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 2 sprigs fresh thyme
- ½ tsp black pepper
- 1 tsp fleur de sel or coarse sea salt

Heat oven to 450°F. Pat ribs dry with paper towels. Season generously all over with salt and pepper.

Arrange ribs meat-side up on a sheet pan. Roast for 15 minutes until edges start to brown.

Stir mustard and honey together in a small bowl. Strip thyme leaves from stems.

Brush mustard-honey glaze all over the ribs. Scatter thyme leaves on top. Roast 8–10 minutes more until edges crisp.
