Ingredients

  • 1.75 lbs pork spare ribs (1.5 to 2 lbs, cut into 3-bone pieces)
  • 3 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • ½ tsp caraway seeds
  • 1 tbsp apple cider vinegar
  • ½ tsp smoked paprika

Instructions

  1. 1

Preheat oven to 425°F. Pat ribs dry with paper towels, then season generously with salt and pepper.

  2. 2

Spread ribs on a sheet pan in a single layer, bone-side down. Roast for 12 minutes until edges brown.

  3. 3

While ribs roast, whisk together Dijon, brown sugar, caraway, vinegar, and paprika in a small bowl.

  4. 4

Remove pan from oven. Brush glaze generously over the top of each rib piece.

  5. 5

Return to oven and roast for 8 more minutes until glaze is sticky and edges look caramelized.

  6. 6

Let cool 2 minutes. Serve hot with extra glaze drizzled on the side.
