Ingredients

  • 1 lb pork belly or shoulder, thinly sliced
  • 2 medium leeks (white and light green parts), sliced into 1-inch pieces
  • 2 tbsp doubanjiang (spicy bean paste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 1 tbsp neutral oil

Instructions

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

    Add pork slices in a single layer; don't stir for 2 minutes until bottoms crisp and brown.

    Flip and cook 1 more minute until edges look translucent. Transfer to a plate.

    Add ginger and bean paste to the empty skillet; stir constantly for 30 seconds until fragrant.

    Add leeks, soy sauce, and vinegar; toss over medium-high heat for 2 minutes until leeks soften slightly.

    Return pork to the skillet and toss everything together for 30 seconds. Serve immediately.
