Ingredients
- 1 lb pork belly or shoulder, thinly sliced
- 2 medium leeks (white and light green parts), sliced into 1-inch pieces
- 2 tbsp doubanjiang (spicy bean paste)
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, minced
- 1 tbsp neutral oil

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

Add pork slices in a single layer; don't stir for 2 minutes until bottoms crisp and brown.

Flip and cook 1 more minute until edges look translucent. Transfer to a plate.

Add ginger and bean paste to the empty skillet; stir constantly for 30 seconds until fragrant.
