Ingredients

  • 1.25 lb ground pork
  • ½ medium yellow onion, minced
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • ⅓ cup all-purpose flour
  • 1 large egg
  • 3 tbsp neutral cooking oil

Instructions

    Combine ground pork, minced onion, garlic, cilantro, flour, egg, salt, and black pepper in a bowl.

    Mix with your hands until just combined—don't overwork or the fritters will be tough.

    Form mixture into 8 patties, roughly 2.5 inches wide and 0.5 inches thick.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Add patties in a single layer—they should sizzle immediately. Cook 3 minutes without moving.

    Flip each patty once and cook another 2–3 minutes until golden brown and cooked through.
