Ingredients

  • 1 cup cooked ham, finely diced
  • 1 cup whole milk
  • ½ cup all-purpose flour, divided
  • 3 tbsp butter
  • 2 tbsp fresh parsley, finely chopped
  • 1 cup panko breadcrumbs
  • 2 whole eggs, beaten
  • 1 cup neutral oil for frying

Instructions

    Melt butter in a large saucepan over medium heat. Whisk in 3 tbsp flour until smooth, then cook 1 minute stirring constantly.

    Pour milk slowly while whisking to avoid lumps. Cook 3 minutes, stirring often, until the mixture thickens and coats the back of a spoon.

    Stir in ham and parsley. Remove from heat and spread onto a plate to cool completely, about 8 minutes.

    Place remaining flour in one shallow bowl, beaten eggs in another, and panko in a third. Form ham mixture into 12 oval croquetas.

    Coat each croqueta in flour, then egg, then panko, pressing gently so crumbs stick. Heat oil in a large skillet over medium-high until shimmering.

    Fry croquetas in two batches, 2 minutes per side, until deep golden brown. Transfer to a paper towel to drain. Serve hot.
