Ingredients
- 1 cup cooked ham, finely diced
- 1 cup whole milk
- ½ cup all-purpose flour, divided
- 3 tbsp butter
- 2 tbsp fresh parsley, finely chopped
- 1 cup panko breadcrumbs
- 2 whole eggs, beaten
- 1 cup neutral oil for frying

Melt butter in a large saucepan over medium heat. Whisk in 3 tbsp flour until smooth, then cook 1 minute stirring constantly.

Pour milk slowly while whisking to avoid lumps. Cook 3 minutes, stirring often, until the mixture thickens and coats the back of a spoon.

Stir in ham and parsley. Remove from heat and spread onto a plate to cool completely, about 8 minutes.

Place remaining flour in one shallow bowl, beaten eggs in another, and panko in a third. Form ham mixture into 12 oval croquetas.
