Ingredients

  • 1.5 lbs Pork spareribs or short ribs, cooked
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • ½ tsp Garlic powder
  • 8 count Warm flour tortillas (6–8 inch)
  • 1 set Lime and fresh cilantro, for serving

Instructions

    If ribs are cold, let them rest at room temperature for 5 minutes.

    Remove meat from bones and shred into bite-sized pieces with two forks.

    Mix cumin and garlic powder in a small bowl.

    Heat oil in a large skillet over medium-high until shimmering, about 60 seconds.

    Add shredded pork and sprinkle cumin mixture evenly over the top.

    Cook without stirring for 3 minutes until the edges crisp and brown.

    Stir and cook another 2 minutes until most surfaces have color.

    Warm tortillas in a dry skillet or directly over a gas flame, 20 seconds per side.

    Fill each tortilla with pork, squeeze lime, and top with cilantro.
