Crispy Pork Belly with Herb Butter Sauce

Ingredients
- 1 lb pork belly, skin-on, cut into 2-inch-thick slices
- 3 tbsp butter
- ½ cup fresh parsley, roughly chopped
- ½ whole lemon
- 2 cloves garlic, minced

Pat pork belly slices dry with paper towels. Season both sides generously with salt and pepper.

Heat a large skillet over medium-high until very hot, about 90 seconds. Lay pork belly skin-side down.

Sear 6–8 minutes without moving. Skin should crackle and turn golden brown. Flip and cook 3–4 minutes more.

Transfer pork to a plate. Pour off all but 1 tbsp fat. Add butter and garlic, stirring until fragrant, about 30 seconds.

Add parsley and a squeeze of lemon juice. Stir to combine, then pour over the pork.

Serve hot with the pan sauce drizzled on top.
