Ingredients
- 1.5 lb pork belly, skin-on
- 1.5 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp fish sauce
- 1 whole lime
- 3 whole garlic cloves, minced

Pat pork belly dry with paper towels. Score the skin in a crosshatch pattern, cutting about 1/8 inch deep.

Rub salt, pepper, and minced garlic all over the meat and skin. Place skin-side up on a sheet pan.

Roast at 425°F for 15 minutes until the skin blisters and crisps and the meat is cooked through.

Drizzle fish sauce over the hot pork. Let rest 1 minute so the sauce pools around the meat.
